2022 Whitegate Savagnin
Tasting Note
Colour: Super clear and bight very pale straw.
Aroma: Very complex with finger lime, sweet lemon, white peach,
plum blossom, flint, pronounced minerality, a creamy note from the lees
stirring and a hint of almond meal.
Palate: Textural and complex with fantastic length and wonderful
mouthfeel showing lime, pineapple, wonderful minerality, saline notes and
a lovely barrel ferment character. The wine evolves as it moves along the
tongue.

Vinification: The Grapes were pressed immediately on receival at
the winery with the free run and pressings separated. A one day partial
cold settle removing only the heaviest solids was then undertaken before
inoculation and the commencement of fermentation in tank. Fermentation
continued in tank for the first seven days before being transferred to
barrels for the remaining 44 days of fermentation. Lees stirring was
undertaken twice weekly to increase complexity and mouthfeel.
Maturation: Following fermentation the wine underwent partial MLF,
remaining in barrels for a further two months with Lees stirring weekly to
improve mouth feel and complexity. The wine was bottled unfined and
unfiltered.

Review
One of the world’s best white grape
varieties made here from Strathbogie Ranges. Neat and tidy one here.
It’s got all the texture, amazing drive, a sense of precision and yet
minerality, gentle nutty savouriness, a core of green apple and preserved
lemon, alpine herb notes going on and in and around that all. Chalky and
puckering, extreme length and persistence, refreshing and yet one to sink
into and see relax and unfurl. A brilliant white wine, delicious, moreish
and just so darn interesting.

Tasting Note
Colour: Clear, bright pale straw with clear edges
Aroma: Very complex with lemon pith, finger lime, plum blossom,
elder-flower and just hint of struck match from time on lees.
Palate: Characters of fresh yuzu, longan and dragon fruit, great
acid drive with wonderful length and freshness. This wine has amazing
texture from time on skins and a lovely creaminess from the time on lees
with lees stirring.

Vinification: Two day cold soak, followed by fermentation on skins
of between 8 and 20 days to build complexity, gentle punch-downs twice a
day to extract the amazing character of the thick skins without extracting
too much tannin, before being pressed off into barrel for a total of 37
days of fermentation with lees stirring twice weekly to increase
complexity and mouthfeel.
Maturation: Following fermentation the wine was moved to tank to
retain freshness and those wonderful citrus and floral aromas.
Bottled unfined and unfiltered.
